Research has verified that roasted coffee contains a powerful antioxidant known as methyl pyridinium. Roasted coffee is the only food type where methyl pyridinium is found in any significant quantity. 

The compound in raw coffee beans is called trigonelline. When coffee beans are roasted, the trigonelline forms the strong antioxidant methyl pyridinium. You can find this in all types of coffee, including decaffeinated coffee and even in instant coffee. 

Another link to keep in mind is the one to a reduced risk of developing type 2 diabetes. Studies have shown that patients who drink a couple of cups of coffee each day could actually be reducing their risk of developing diabetes by up to 50% compared to people who don't drink it at all.
